We are grain free, so here are our fave breakfasts (that don't involve eggs)

Coconut flour pancakes
coconut flour waffles
Stuffed waffles, make the waffles and then lay them in a large glass lasagna pan. Pour some melted cream cheese, or ricotta or mascarpone over the waffles, and some fruit (we often use frozen cherries from the summer, or homemade preserves) and another layer of waffles. Bake till everything's gooey and serve. Mmmmmm....

coconut flour banana bread or pumpkin bread or blueberry bread (you get the picture) french toast. You can make egg free french toast with oil and milk/coconut milk. If you'd like a recipe I have a vegan french toast recipe I can dig up.

Quinoa flakes "oatmeal".

Healthy apple crisp. I slice the apples, sautee them in butter, cinnamon, nutmeg, cloves and ginger. Top them with chopped almonds, pecans, hazelnuts and quinoa flakes that I've toasted in a pan and then drizzled 2 tsps of maple syrup over to coat. Bake until bubbly. Serve with real whipped cream. Mmmmmmmmmmm feels like dessert, but very nourishing. I've added cranberries, raspberries, etc. It's always a hit! (I sauteed a huge batch of apples and then froze them in portions so this is a snap to throw together)

Sweet potato or butternut squash skillet bowls. (Yes ours have eggs but you could easily omit) Cube up the sweet potato or squash, saute in CO, spices of your choice, add onion and garlic, sausage, cubed ham, bacon, chopped spinach and other veg. Top with shredded cheese, salsa and sour cream. Mmmmmmmm...

Where do you get the quinoa flakes?

The skillet bowls sound good. Have you tried making them ahead and reheating? Mornings are hectic in our house.

I've just spent the last 30 minutes taking notes and printing recipes - thank you SO MUCH!

I'm going shopping tomorrow morning and picking up a bunch of ingredients needed. I will report back on our breakfast success (or failures )

Teff porridge. Like oatmeal, but you use Teff instead. We also like Bob's Red Mill Mighty Tasty Hot Cereal.

I've never seen quinoa flakes, but we just discovered breakfast quinoa and we love it. We just put equal parts quinoa, milk, and water in a pot and stir in a handful of dried fruit (usually dried blueberries and/or cherries). I bring it up to a boil and then simmer it for about 15 minutes until it's done, then stir in a little bit of honey or maple syrup and serve. Hearty and so filling!

I also love soup for breakfast, and I LOVE salad for breakfast. A huge salad with lots of veggies in it and a slice of cheese toast is my favorite breakfast ever. I'm also a big fan of grits/polenta and redeye gravy - just cook some chopped meat or a little onion in a skillet and then pour in a big splash of coffee and another of red wine or any broth. You can stir in a little toasted sesame oil and/or tamari if you have some, and either black or red pepper. Bring it up to a hard boil for a couple of minutes until it thickens slightly and then pour it over the grits. It's been my experience that menfolk especially love this one, even the ones who don't like coffee.
