What to do with beef fat?

When I picked up my half a cow the other day, the guy was double checking that I wanted the organs and bones and all and he asked "Do you want the fat too? It still has the kidneys attached." I've never taken that before, so I had no idea what I'd do with it, but I couldn't resist taking it. So any suggestions of what to do with it now?

Render the fat... I"ve been researching (google) it for a while, but haven't actually done it yet, the fat is still in the deep freeze. Once it's rendered it will be tallow. I'm told it makes a mean fried onion and/or fries amongst other things. I'm pretty sure those kidneys could be used too. But other, more skilled folks might have good ideas.

I have never done this myself, but can't you make suet? then you can use it in Christmas pudding. And bird feeders!

Beware, cooking kidneys stink like nothing else on earth.

I'd probably cut the fat off and render it and then either cut the kidney into small pieces for freezing and eating (ala liver) or freeze small portions and hide in other dishes.

After looking it up, I think I'm definitely going to render it. Sounds easy enough. Soap on the other hand sounds way to involved to accomplish around here... but boy is it tempting. Thanks so much for the ideas!

I haven't researched this but - wouldn't kidneys not be a good thing to eat? Since they are the receptacles for waste (including poison!) in the body? It just seems like the kidneys would basically be a concentration of bad things to ingest.
