Celebeation Roast? I don't know who makes it but it is kind of expensive for what you are actually getting, lots of stuffing. But it is really good. Would love to try and copy it but dont know where to start. Any ideas?

Hmmm...it depends on what you're after. I've never made a stuffed roast of any kind, but I have made some seriously delicious veggie roasts. My favorite is this soy and seitan "turkey" by Bryanna Clark Grogan - I think she has directions for stuffing it, too, I just prefer my stuffing on the side personally. It is SO delicious and juicy! I'm seriously bummed my DH seems to be developing a gluten senstivity, because I could live on this "turkey" for weeks!

I think that Robin Robertson has some stuffed tofu/seitan recipes in the Vegetarian Meat and Potatoes Cookbook - you might want to check it out from the library. Haven't tried them, but her recipes are pretty reliably good (although if you like a lot of seasonings, you might amp that up a bit - she tends to go light in my experience).

Just wanted to add that I LOVE celebration roast, but it is spendy I know.

Oh and just remembered - Vegan Dad has some really good faux meat recipes including some that resemble the celebration roast - here's one in particular - again, haven't tried this particular recipe, but had a lot of success with his stuff in the past.
