Okay, so I'm making the 3rd batch of bread with this particular starter. I'm doing the test pre-Thanksgiving. I'm in charge of sweets and baked goods. YAY!!! They get TF food!!!!!
I inherited a glass loaf pan with a lovely domed lid. I am covering the bread to rise for 12 or so hours and I think what a lovely thing it would be to just use the glass cover on the glass loaf pan instead of wrapping it in a towel. So, I do. About 5 hours in, I'm cooking supper in the kitchen and all of a sudden, the lid to that pan shoots off the top, flies up into the air and then off the top of the refrigerator and crashes into the floor. Fortunately, nothing was broken... and it didn't hit anyone. I just love
how TF sourdough is a living breathing entity with a life all its own. Yum!
Especially when you knead it and it fights back.
