how to eat a high fat (low carb) diet on not a lot of money?

That pretty much sums it up.

We buy our animals whole, but can only buy a certain amount a year and are already at our budgeting limit. I can cut out ALL carbs that I am buying and that would free up some money.

But what do you buy/eat for fats in your day?

We do grassfed tallow , grapeseed oil, and coconut oil. Both tallow and coconut oil bought in 5 gal containers - grapeseed in 1 gal which saved a huge amount of money. I don't have any local sources for good lard or such- I know a lot seem to be able to get lard from the butcher. I found other people to go together on for these as well, but that took me a long time to find people and sources though.

The best thing I've done for eating a high-fat diet is invest in a gallon of coconut oil. I make coconut oil-nut butter balls with it (usually peanut butter, because, realistically, I don't make my own and PB is cheap.) Those balls are sooo easy, fill a sweets craving, but also keep you full so you don't feel like you need to snack constantly.

Aside from that, butter, butter, butter!

5 gallons of coconut oil from WFN, TT or MRH. I recently got 5 gallons for $105 through TT delivered, using a coupon plus a sale.

I've done the math and 'round these parts, home-rendered lard is one of the cheapest fats going--if you have a source for pork fat, you'll find plenty of how-to threads in this forum. And of course, saving leftover sausage and bacon fat is free, in a manner of speaking. Unfortunately, I don't find many of these fats as tasty in large quantities as butter, cream and CO.

That's what I get, too. Doesn't even last us a year. Man, $105?! Where'd you get a coupon?

They recently did a promotion where you could join their savings club thingie for two weeks for free. I joined and during that time they both put it on sale and put out a one-day only free shipping coupon. I knew how good of a deal it was and I snapped it up.

They do the one-day only free shipping maybe once every 3 months or so. I literally check their deal blog daily and am on their mailing list to make sure I don't miss it.

If you buy a portion of a cow, ask for the suet (fat). You can render that into tallow and then you've only thing you've paid for is the cost to cook it down.

How do you make CO/nut butter balls?

Also, I finally made my bone broth, from marrow bones and a knuckebone. It's a lovely jelly consistency, with a good layer of nice hard fat on top. I read somewhere this morning that some folks separate off the fat, which I think I'd like to do, and it seems fairly easy to do. I poured myself a ladleful, right out of the crockpot, salted it a bit, and when I took a sip, I had a mouthful of hot fat since it floats on top of the stock. That was painful.

So, I think I definitely want to pull that off of the top of the jar and use the two products separately. So, can I use that fat where I would use beef tallow? I probably got just under a half a pound of it topping off two quart jars of beef jelly. Which is good, as my bones were relatively expensive.
