Need ideas, please--how do I use bok choy?

I have 2 heads (are they called heads??) of bok choy, not the baby kind. I've never made it before and I want to use it up before it goes bad. Any suggestions or recipes? I understand you can cook the leaves and the stalks. Do you cook them together or in separate meals? Thanks so much!

Yumm-O!

Here are some suggestions (keep in mind you cook the whole "bulb"...just slice/dice/julienne)

-steam and freeze for soups etc
-stir-fry with oyster sauce
-with onions and garlic
-like a pesto

The list could go on and on...essentially you can use it like spinach...in a quiche, soup, sauce, sandwich, side-dish

Not a recipe, but i feel the need to voice my two cents. I love juicing bok choy. It gives my juice a pleasant, peppery taste.

I love to chop it up and throw it into a pot of veggie soup right at the end. MMMM!

Quarter the bok choy, and lightly simmer in a broth of dashi and a splash of soy sauce. Serve over salmon.

I like it best in fried rice- add the whites first and then the greens at the last minute.

but really, I'll eat it in anything. Great in green and red curries too. It is about the only thing that grows well in my garden, so we eat alot of it.

I chop it up and use it in stir fry

Bok choy is also excellent roasted (but what isn't?). You can still toss it in other stuff (like a stir fry) afterward or make up some kind of dressing/sauce and treat it like a warm salad.
