just thought i'd share for anyone who is gluten free but missing the real chewiness of bread - MOCHI. it's basically pressed brown rice that you bake in the oven for 10 minutes, and it is warm and chewy and yummy. i just found it at whole foods, and my newly GF 3 yr old loves it! it's kind of plain, so i made a cream cheese dipping sauce for it. but you could make any kind of sauce - CF, etc. i know i'm a dork to post this, but thought someone else might enjoy it, too!

I got it at Whole Foods, refrigerated section. There couldn't have been many ingredients because we could have it.

My Filipino aunt makes this all the time. Deceptively simple ingredients - her recipe is sticky rice, coconut milk, I think a little bit of oil, and brown sugar. I have her recipe and can make it turn out about once every 3 tries (and I am a good cook). She says I need to spend the whole day at her house and she'll teach me how to make it. If only I had a whole day to spare when we're visiting that part of the country.

i think the ingredients to the plain type may just be literally brown rice. here are a few links i found withe ideas...
