Tasty Coconut Milk Ideas...?

I just made a yummy coconut milk, frozen banana, and peanut butter shake. Soooooo delicious (and sooo filling--I could only drink a little of it!)

I'm looking for more ideas for drinks (or other things) to make w/ coconut milk. (I'm thinking of making coconut milk smoothies and leaving them in the fridge to sip when I'm craving something yummy!)

Any ideas? What are your favorite ways to use coconut milk?
(And if you have dairy based ideas, coconut milk is usually a great sub so share those too! )

This was really good--very fast and easy strawberry banana coconut milk ice cream. Thought I'd add it here!

I basically use it anywhere I'd use cream. Ice cream, custards, puddings, shakes. Eggnog. Lotsa eggnog. Hot chocolate. Instead of milk in breakfast dishes.

I make coconut milk yogurt (which I use as a savory thing like dips and on baked potatoes, or sweet as just yogurt or fruit dip or to make frosting). I also use it in frosting, baking, hot cocoa, creme brulee, key lime pie squares...

My DS's favorite smoothie is banana, cocoa, coconut milk, and a little maple syrup. DD2 likes pineapple juice, coconut milk and ice. I like pineapple juice, coconut milk, and frozen strawberries.

We go through a LOT of coconut milk.

Mmm--the pineapple/coconut milk/ice blend sounds pina colada-y

Kathy, I can't remember what you use to thicken your yogurt--do you think I could use arrowroot? Just looking for options--I've used gelatin and the past w/ so-so results...Also, do you mind sharing your frosting recipe? I have still not figured out a good one...hmmm--I think I just need to revisit your blog!

krankedyann--I want that eggnog recipe *insert drooling smilie here*. Sounds divine!

I love all the ideas so far! Thought I'd add a couple more--mix it w/ any kind of potatoes--makes delish mashed, twice baked or scalloped potatoes. Also good in cream based soups in place of the cream...I also like the thickest, creamiest stuff on top of cooked veggies.

Mmmmmmm...I've made this b/4 and it makes AMAZING fudgesicles as well.

Coconut milk is so awesome!

I don't do anything special here, usually coconut milk icecream- I love doing a version with chopped cherries, dark chocolate, chopped nuts sauteed in coco oil- yummy! However, dh and the kids just prefer chocolate. WE make a lot of hot chocolate as well.

Very pina colady. I am not a fan of arrowroot. Don't like the sharpness of it. I use sweet potato starch or tapioca starch in the yogurt (and in everything else). The frosting recipe is on my blog. DH thinks it tastes like cream cheese frosting on carrot cake muffins. Oh, there's a coconut quickbread recipe on there too that uses coconut milk. I have to get some more coconut flour to make that one again. It was really moist and delicious.

I pour a little bit of boiling water over beef gelatin & cocoa powder & stir until dissolved. Then I add 2 drops of stevia glycerite & pour in a can of coconut milk. Mix & refrigerate. It's turns out like a chocolate-coconut-pudding-jello. I also make it with cream, for me.

For a can of coconut milk, I probably used a heaping tsp of gelatin & hmm...A TBSP or 2 of cocoa - you could start with 1 TSBP & if it's not enough, just dissolve some more in hot water before adding to the coconut milk mixture. It won't dissolve if you add it to something cold.

You can make ice cream with this mixture too (leaving out the gelatin) & adding some egg yolks if you'd like.

My absolutely FAVORITE coconut milk recipe is:

Coconut Rice
Serves 4
Vegetarian, vegan and gluten-free

1.5 cups jasmine or basmati rice
1 14 oz. can coconut milk
3/4 cup unsweetened dried shredded coconut
1 teaspoon salt
Prepare the rice in your usual way (rice cooker or stovetop), but substitute the coconut milk for an equal amount of water. Then add 1/4 cup more water to make up for the fact that the coconut milk has some solid content.
Meanwhile, carefully toast the dried coconut in a dry skillet over medium-low heat, or in a toaster oven. Stir frequently to be sure that it all browns nicely and none of it burns. This should take about 5 minutes.
Reserve a bit of the toasted coconut for garnish. Just before serving the, stir in the rest of the toasted coconut and salt. Fluff and serve.
I originally found the recipe at herbivoracious.com. Its wonderful paired with something a little spicy (or a lot spicy, if that's what you prefer).

Organic Native Forest is the only brand which claims not to use bisphenol-A in the can lining, so I only use that kind. (I contacted all of the companies.) Plus, I think it tastes the best.
