How to make really bubbly water kefir?

I really want to make my own truly carbonated drinks.

I have grains, water, sugar, and mason jars, but my kefir does not get very bubbly. What do I need to add to make the grains much happier? I have them with pieces of ginger right now, and they seem a little happier, but not ecstatic

Couple of things that help...

--Using a sugar that contains molasses (like Rapadura or Sucanat) or adding a teaspoon of molasses to the 1/2 cup of white sugar.

--Using high mineral content water (not always possible but I thought I'd mention it just in case).

--Bottling in a truly air tight container. Canning jars just don't see to work all that well unfortunately. If you have a local beer/wine making supply store, get a few Grolsch-style bottles. They work a lot better.

--Once your water kefir is done fermenting and you've removed the grains, add juice and then bottle. Leave on the counter for 24-72 hours. Open with caution
