kraut making question?

Thread Starter
I have a crock of sauerkraut fermenting. I have topped the kraut with a cabbage leaf and then set a plate on top. The kraut is all submerged but the cabbage leaf is not, it has curled up somewhat and is exposed. It is starting to go moldy. Should I remove the leaf now?, it is 4 days into the ferment. Or can I remove it when it is ready? will the kraut underneath the moldy leaf be ok to eat?

Thanks, Kelly

hmm. i would give it a taste if it looks ok. we have been weighing ours down with a "pickle rock" and checking every day or so as our kraut kraut's up pretty quickly now.
