'healthy' christmas cookies

I'd like to make cookies with my son this year. He's allergic to wheat and I try to limit sugar. I've managed to make good gingerbread cookies in the past with spelt and agave but I'd love any links you have to other wheat or gluten free recipes with natural sweeteners. My main problem is the decorating. That's the fun part, but most sprinkles, ready made icing, etc is packed with dyes and other yucky stuff. Can anyone recommend some good, more natural alternative? I don't mind using sugar in the icing but I'd rather skip the chemicals. tia

I will be making our christmas cookies with coconut flour and almond flour.

We will make shortbread/sugar cookie type cookies, flourless chocolate cookies, mini apple galettes, (free form pies) and pecan tarts. All will have some sugar, but it's christmas, they're cookies, and I believe in moderation for all things. I'm going to do some experimenting over the next month with maple syrup and honey to see if I can sub them in.

As for icing, i just made a lovely italian buttercream icing that was so wonderful and light and buttery. Definitely has sugar, but I'm going to try it next time with maple syrup, my favorite sweetener.
