So it's not GF as written but I'll write what I did to convert it and it was yummy!

I made a few changes based on what I had on hand plus I needed it to be gluten free. For the chicken I cooked chicken breasts in a crock pot with sea salt/fresh cracked pepper/poultry seasoning/couple whole cloves and a couple bay leaves. I left it to cool over night in the fridge in the pot which makes the breast really tender. (I did up a large pot full for a number of meals) I used Earth Balance margarine since we can't do dairy. I didn't have chicken or veggie broth so I used the broth from the crock pot after it had separated. I added 2-3 times the basil and oregano called for and for the noodles I used Trader Joes Rice Sticks traditional Thai style pasta broken into pieces about 1 inch each. It came out perfect and even my super picky child liked it.
