A one-size contour or Snappiable fitted like the Kissaluvs Hybrid won't be too bad on a NB.
As far as pockets/AIOs, the best ones on a NB are the FuzziBunz OS and the Rocky Mountain Diaper OS. You'd probably have to wait till the cord falls off (7-10 days), but these can go pretty small since you are tightening the elastic at the legs to make them smaller.

I used all pf's and covers with DS#1, with my new LO I use pf's and BabyKicks Organic Fitted. It's OS and I love it! It's my favorite in my stash. It fits my now 2month old and my 14 month old like a glove. It's pretty amazing how trim it is on a newborn too. There's a special way to fold it so it fits a newborn. It's on their site/blog. Only OS I've used that REALLY fits a newborn.

I agree with the OP about *most* OS dipes being a bit too bulky on the average NB. I bought some BG before ds was born and ended up being able to use them right away but that being said he was 10+lbs at birth and they were even a teeny bit too bulky for *my* liking on him. But by the time he was a couple weeks old they fit him perfectly to me.
