Soups!

The weather is finally starting to cool off some here & I desperately want to start eating more soup. My kids don't really like soup so I am looking to get creative this year by adding rice/noodles or serving theirs over rice/noodles, or whatever else I can come up with to get them to try it.

What are your favorite recipes? Anything that is a big hit with your kids too?

My ds LOVES miso soup...I think it's the salty taste. We add chunks of tofu, ginger, garlic, peas and nori.

We also have taco soup which I make with leftovers from taco salads. I usually make it w veg broth, diced tomatoes, a touch of tomato paste, onions, peppers, tortilla chips and grated soy cheese and chunks of avacado on top YUM!!!

"Panda soup" is big here. B/C of Kung Foo Panda. Basically a vegatarian version of thai tom yum noodle soup.

I just made a mock "beef" stew in the crock which ended up really yummy and filling. I used t.v.p chunks. I was really surprised w how good it turned out.

My favourite soup is full of onions, garlic, root vegetables and curry paste with a little honey thrown in at the end.

Do you have recipes that you wouldn't mind sharing for these? It would make me a very happy lady

I don't really use "recipes" but I'll try

Panda soup-
Bring to a boil:
veggie broth
tomato sauce(I use the bottom of the jar rinsed out w veggie broth)
thumb slice chunk of ginger peeled and diced
garlic(we use about 4 cloves but you can use more or less)
lemon grass(if you have it)
dried lime leaves
diced cilantro(i leave this out quite often since the grocery store charges a ton and its not great tasting)
a couple of shakes of vegetarian fish sauce(its called oyster mushroom sauce)
a couple of diced dried mushrooms
diced chili peppers to taste(if I dont have any I just stir in an asian chili sauce at the end)

Let everything boil for about 5 min

Add in cubed tomatoes, sliced peppers, broccoli, sprouts and bok choy(really whatever veg you have) and cubed tofu if youd like

Cook until veg is tender

Inbowls put cooked rice noodle and then laddle soup over. Add more chilis/cilantro and a fresh lime to taste

T.V.P chunk beef stew:

Rehydrate t.v.p chunks w garlic powder, pepper, a pinch of salt.

Coat the t.v.p chunks w flour/ and whatever spices you like. I used garlic, pepper, thyme, rosemary, montreal steak seasoning that I stole from my M-I-L

Fry in a bit of oil.

Throw it into a crock pot w, potatoes(I used 2 large), carrots(2 large), onions(2 small). garlic cloves diced and more spices. The more veg you add obviously the more stew like its going to be
Then veg broth-I used bean water from cooking black beans, seasoned w more montreal steak seasoning. I also added a couple splashes of braggs, and dark miso. We don't have "beef" flavored veg broth around here..It would have been so much easier lol
I added frozen peas into the bowls before I poured the soup in. The soup was steaming so the peas thawed in seconds
cooked on low for about 8 hours? The veg was fairly large chunks

Next time I would add cubed portabello mushrooms, that would make the soup

I made some basic whole wheat dumplings to go on top,but next time I think I would do barley instead. I think the trick to the soup is alot more seasoning then you think you need.

I just made a black bean "soup" w corn dumplings last night that you may enjoy

1.5 c dried black beans soaked
cook in 3 cups water until tender
add onion, garlic, chili powder, cumin, cilantro, tomato paste, 1.5 c veg broth(I use half veg juice/half water)
Simmer for 5ish min

Mix together 1 cup masa 1TBS baking powder 1/2 tsp salt, make a well and mix in 1 egg and 2 TBS oil/2 TBS broth. Mix dough adding water until it gets like playdough
Add frozen corn then
Drop them into the bean "soup" and cover and simmer for about 5 min.

It's not a terribly brothy soup but gosh is it wicked. I found the recipe somewhere on line and cant stop making it

You've gotta find yourself a copy of the Moosewood Restaurant Cookbook (I have the original and revised original) - e.v.e.r.y soup I have made from it has been not just good but DELICIOUS. FABULOUS.

Mmmm making me crave some now

OMG we eat tons of soup. It's wrong really how much we eat. My kids adore it too BUT I have non-picky eaters.

Baked Potato Soup...done in the crokpot and minus the bacon and subbed with veggie broth. Soooo good. We did top ours with cheddar though...I like cheese.

As for other ones we often do Roasted Red Pepper (we love the creamy versions...any recipe works so I have no link...just sub out the chicken broth for veggie broth), Butternut Squash and Corn Chowder, Creamy Lentil Soup, etc.
