What to do with "spaghetti" sauce

I made a TON of sauce last Friday, a bunch went in the freezer. I am looking for new ideas to use it. Right now I make veggie lasagna and serve it with pene. That's about it really. I was thinking of trying baked pene but never tried it. Also dh does not like skinny pasta like spaghetti or linguini, he prefers pene, spirals, elbows, etc. something with a shape or something stuffed. Maybe manicotti? Never tried that either.

Pasta bake? Mix cooked pasta with the sauce, pour into an oven proof dish and top with cheese. Stick it in the oven till the cheese starts going golden brown. Depending on what is in the sauce you may want to add some extra vegetables too.

Serve over baked potatoes

Add some beans and chilli powder and serve with rice.

Homemade sauce is yummy! I love having some in the freezer for a quick meal.

I like your idea of baked penne (or rotini or another type of short pasta). I'd probably saute some veggies, mix in the sauce and cooked pasta, toss into a baking dish and sprinkle some grated cheese on top. Bake till the cheese is nice and melty.

If you use it for pizza I'd probably cook it down a bit so it's thicker, depending on the consistency of your sauce. I also love gnocchi - you can buy them or make your own (they're made from cooked potatoes and flour).

Use it to make minestrone, pasta and bean soup or tomato soup. For tomato soup, just saute a little onion, garlic, carrot, celery, a tblsp of flour, pour in a couple cups of broth, let simmer and thicken, stir in tomato sauce and a splash of cream, then puree if you want. I don't know what's in your sauce, but if it's already really good and seasoned you can just either make a roux, pour in stock, or just thin with a little stock and cream.

Stuffed shells are easier than manicotti in my opinion, but either is good.
We serve it over steamed cauliflower sometimes.
Make some garlic bread and serve individual dipping bowls as a quick and delicious appetizer.

i do this all the time with the leftover sauce from the night before. we make our sauce extra chunky with veggies. it always tastes great!
