How would you reheat this for a potluck?

Tomorrow we are going straight from work/preschool to a church service followed by potluck dinner. EnviroKid enthusiastically planned for us to make a double batch of Lentil Polou (a yummy casserole recipe someone posted here a few months back), half for dinner last night and half for the potluck. So we did that, and it's in the refrigerator now, but I am wondering how best to reheat it since it tastes better warm than cold!

It's in a metal pan, but I could put it in something else and microwave it. But I've found that microwaving is a lousy way to heat a large amount of thick food--it tends to heat very unevenly--and the church's microwave is about 30 years old and unreliable!

I could put it in the regular oven during the church service (20-30 minutes). But how do I keep it from drying out too much, and what is the right temperature? Is there some trick about setting my pan in a pan of water or something like that?

Well, I wish that I knew what the Lentil Polou was, but I generally think that reheating shouldnt dry it out too much, if you keep it covered in foil or parchment right on the surface of the food (in addition to wrapped over the top of the baking dish.)

also, can you add a little broth or even some milk or water (maybe 1-2 TBS) just before reheating? that should create some steam under the cover, and help keep it from drying out too much.

I usually reheat things at about 350 deg. the size of the dish determines the amount of time, but 30 minutes from refrigerated temp should be enough for a 13x9 pan that's full about 1" from the top...

now i have to look for that recipe!

Cover it, pop it in a 300 oven for 30 in or so, stirring halfway (if possible). This is the best way I've found to reheat thick things without drying them out.
