Tomorrow we are going straight from work/preschool to a church service followed by potluck dinner. EnviroKid enthusiastically planned for us to make a double batch of Lentil Polou (a yummy casserole recipe someone posted here a few months back), half for dinner last night and half for the potluck. So we did that, and it's in the refrigerator now, but I am wondering how best to reheat it since it tastes better warm than cold!
It's in a metal pan, but I could put it in something else and microwave it. But I've found that microwaving is a lousy way to heat a large amount of thick food--it tends to heat very unevenly--and the church's microwave is about 30 years old and unreliable!
I could put it in the regular oven during the church service (20-30 minutes). But how do I keep it from drying out too much, and what is the right temperature? Is there some trick about setting my pan in a pan of water or something like that?
