Looking for a homemade ice cream recipe, we don't have an ice cream maker so we would be doing it by hand...found a few on other websites but they all involved using raw eggs, and I am not a fan...know of any other ways? TIA!

I prefer the custard method for ice cream, which involves cooking the eggs.
But without an ice cream maker you have a couple options, you can do the fork/whisk method, which involves stirring the ice cream every 20-30 minutes for several hours until it's frozen, or you can whip the cream and fold it into the rest, and then freeze it, the cream traps the air during freezing. Neither gives a perfect ice cream consistency, but both return decent ice cream.
Of course, you could always do the two ziplocs method or the two coffee cans method for a more realistic texture.

The absolute easiest way is one can sweetened condensed milk with 3 cups cream and some vanilla. Whip up cream in a blender or mixer till soft peaks, then mix in a third of the whipped cream in to the condensed milk/vanilla, then fold in the rest of the cream lightly. Pour right into a large container and freeze. No scraping, no fuss. It takes several hours, like overnight or at least 4-6 hours to be compltetly frozen
