Ok, so yesterday I made taco soup for lunch (chicken bone broth, black and kidney beans, some salsa, taco seasoning and corn). Ate it with a big ole dollop of sour cream of course.
Side note: Does anyone know if "vegetable" corn...like what you would eat on corn on the cob or in a can, not dried, is considered a grain? I know it is a grain when dried, but I figure since it is not possible to grow a plant with not-yet-dried corn then it does not yet contain all the seed qualities that would make it a grain. Yes, no?
Dinner yesterday: finally got to cook my chicken. leftover potatoes and squash as the sides.
Breakfast today: none of my usual breakfast choices were to be had, so I ate some pecans and had a spoonful of coconut oil
lunch: more taco soup
dinner: husband cooked grass-fed beef hamburgers with cheese, side of corn (yes, again with the corn).
