coconut pumpkin muffin recipe?

Ok, I think I am ready to try some grain-free baking for my dd and something that comes to mind as an appealing seg-way would be coconut flour pumpkin muffins, anyone have a simple recipe for something like this?

I was also thinking of some sort of pumpkin/corn muffins with coconut flour, I realize corn is a grain, but are fine with it.

Any ideas are appreciated.

I might try the one posted here: http://www.apinchofhealth.com/forum/...ead.php?t=6158 I like that it uses honey for a sweetner (I'll just double the honey and leave out the agave...)

Pumpkin Muffins

These turned out very small, about 1.5 inches thick, kind of flat, but moist. I thought they tasted good, but I am not too picky. I put butter and cream cheese on the first one, hot out of the oven. I am freezing the rest, so I'll see how that works out.

Ingredients

Six eggs
1/2 cup pumpkin
1/2 cup coconut flour
4 Tablespoon coconut oil, melted (or butter)
3 Tablespoon honey (I used a dark, multi-floral one)
3 Tablespoon agave nectar (could double the honey if you don't have this)
1/2 teaspoon baking powder
1 teaspoon vanilla
Spices (I used 1 t cinnamon, 1/2 t allspice, 1/2 t cloves because that's what I had, but others would be fine too)
Non-stick spray

Instructions

Mix together eggs, pumpkin, oil, honey, agave, vanilla, and spices. Mix baking powder with flour, and add slowly to the egg mixture, mixing until lumps are gone. Spray muffin pans with non-stick stuff. Divide between 12 muffins, about 2T of batter in each one. Cook at 400F (205C) for 15 - 20 minutes.

(Use 4T batter for a normal sized muffin, and double the info below.)

Calories: 146
Protein: 5g
Carbs: 9g - 4g fiber = 5g usable carbs
Fat: 9g
