KerryAnn posted a coconut milk based one in the recent coconut milk thread:
Quote:
1 dozen raw eggs
1/2 cup rapadura or honey, or more to your taste
4 cups coconut cream
2 cups coconut milk
2 Tbs vanilla
a good shake of salt
a sprinkle of nutmeg

Blend all in a blender and chill in a stainless or glass container for 24 hours before serving.
Wanting to try it soon--sounds yummy!

Weeeellll, I don't know what officially qualifies as egg nog, but since I am overloaded with eggs from my hens and need more ways to use eggs, I have been taking a tall glass of cold milk, adding two egg yolks, a spoonfull of raw honey, and a grating of nutmeg, then wizzing it with the stick blender. It is really good and egg noggy tasting!

This is my favourite Eggnog recipe...

DH has always hated eggnog until he tried this one and after I made it he kept on asking me to make more... my boys love it too!

It's from Alton Brown

Ingredients

* 4 egg yolks
* 1/3 cup sugar, plus 1 tablespoon
* 1 pint whole milk
* 1 cup heavy cream
* 3 ounces bourbon
* 1 teaspoon freshly grated nutmeg
* 4 egg whites

Directions

In the bowl of a stand mixer, beat the egg yolks until they lighten in color. Gradually add the 1/3 cup sugar and continue to beat until it is completely dissolved. Add the milk, cream, bourbon and nutmeg and stir to combine.

Place the egg whites in the bowl of a stand mixer and beat to soft peaks. With the mixer still running gradually add the 1 tablespoon of sugar and beat until stiff peaks form.

Whisk the egg whites into the mixture. Chill and serve.

Of course I leave out the Rum for the kids version

I've never made this with raw dairy, but no reason it wouldn't work... this is a recipe I devised myself trying to get the eggnog flavor I wanted. Most of the time I'll heat up the cream and steep the nutmeg in it before adding to the eggs.

Eggnog
8 Egg Yolks
12 Eggs
1 qt Half & Half
1 qt Heavy Cream
1 1/2 cups Sugar or ~1 c honey
2 1/2 ounces Vanilla Extract (5 Tbs)
1 teaspoon Salt,Or To Taste
1 Whole nutmeg/1 tablespoon Nutmeg,Or To Taste

Beat the eggs together with the salt until smooth. Add the sugar/honey and beat until dissolved/pale yellow. Beat in the remaining ingredients until homogenous.
