What is on the table at your vegetarian Thanksgiving dinner?

I think we're going to have a bird this year so I don't want to invade the veg thread, but I did a vegetarian Thanksgiving last year and it was lovely. We had these roasted vegetable cornucopias for our main dish and centerpiece and they were fantastic! I couldn't get all those baby veggies in November so I just used an equivalent quantity of autumn veggies. The roasted vegetable gravy is especially good and I'm not normally a gravy person.

I also made my rummy sweet potatoes, and cornbread dressing, and corn casserole. My friend made green beans and cranberry sauce. I can't remember what we had for dessert but it was probably pumpkin pie or something - I think we didn't eat much of it, if any, because we were still too full from dinner.

I do remember I had these lovely little sweet squashes I was going to roast whole (top open, guts removed) with a pat of butter, a little cinnamon, and maple syrup inside, but we had that for breakfast the next day instead. It would've made a fabulously healthy dessert though, even moreso if you skipped the butter.
