What can you tell me about fermented honey?

So we bought some raw local honey at the farmers market this year. We then moved out to the lake and left it in our old house. Our BIL took over our place so a lot was left behind and we spend a fair bit of time here doing laundry or hanging out. We hadn't touched our honey here because we had some out at the lake.

Today we drove into town to make breakfast because of an appointment and when my husband opened the honey it was frothy and "winey". I assumed it would be fine for the tiny amounts we were using and fermented raw food is good for you right. I looked it up and you can even buy pre-fermented honey. Wow! Did it ever taste amazing. It really does something for oatmeal and cream. It has a really interesting taste, like soaked oats that just makes me feel like it's good for me. The smell is like that too.

So, I was wondering if anyone knew more about it. Does anyone else allow their honey to ferment and if so how do you store it once it does it's thing.

Isn't mead made with fermented honey?

Yeah generally if water gets into honey, it will attract yeast and ferment. That's why mead is the oldest alcoholic drink on the planet - our ancestors could just stumble on it if a hollow tree that was host to bees blew over in a storm, a couple weeks later there would be mead, just sitting there, smelling all yummy and tasting good.

I make mead myself with just water and honey. It catches its own yeast from the air. But with only a small amount of moisture added, I think you get less alcohol and just more yeast growth. Whatever - it's yummy, enjoy!
