Raw cream and ice cream

Do you use your raw cream to make ice cream? Or does freezing them inactivate all the yummy beasties and enzymes?

I use my raw cream and milk to make ice cream and it's delicious. I suppose technically, you are putting the organisms in suspended animation, but your body is pretty hot, so I would imagine they "wake up" as they go down.
And if not, it's still infinitely healthier than store bought ice cream

We notice, however, that it tends to be drier and flakier than commercial ice cream.
