Your Favorite TF Indian Recipe(s) PLEASE!

What are your favorite Indian recipes? Please share! I don't make Indian food at home all that often, but LOVE it and miss it. I used to go to this amazing restaraunt for their lunch buffet, but since dropping ds's allergens (gluten/dairy/soy and corn) we don't go anymore. I have a bunch of Indian spices, and have been happy w/ a few dishes I've made, but I'd *love* some of your tried and true favorite Indian recipes to try!!! Even if they include dairy (or other things we avoid) please share, as I can do lots of subs (coconut milk usually works in place of the dairy, etc...)

My fave:

Coconut curry chicken with quinoa

I start by throwing a can of coconut milk in a pot with half an onion, 5 or 6 cloves of garlic sliced in half, a bay leaf and 2 tbsp of hot yellow curry powder.

In a large frying pan, I reduce 1/2 cup of wine (feel free to use bone broth or stock) and then throw in the quinoa, and the rest of the cooking liquid. (I never use water). Once the liquid has cooked off, strain the coconut milk into the fry pan and let that become absorbed by the quinoa (All of the liquid won't just cook until quinoa is right texture) Now brown your chicken slightly in another fry pan with coconut oil, and your fave indian spices. I like mustard seed, cardamom, cumin seeds, chili flakes... I let them all pop in the oil before I throw the chicken in. Anyways, brown it a little and then chuck it into the quinoa mixture and cover and let simmer on low until chicken is done. Taste and adjust seasonings accordingly.

We love indian food too, infact I am just about to make a lamb korma for tomorrow nights dinner (very simple I think, just onions fried with some mushrooms and yellow pepper, then brown the lamb, add spice mix, coconut milk, lamb stock and maybe some ground almonds and simmer until lamb is soft), will probably serve with those coconut flour flatbreads I posted in the other thread (maybe with some chopped pistachios mixed in too).

Something I did the other night, which went down very well was salmon fillets marinated in yogurt (sure coconut milk or yougurt would work well too), spices and a squeeze of lime then baked. I served with basmati rice () with some sauteed onions, garlic and zucchini & lots of butter mixed in.

Pakora or bhajis are good too and something we make a fair bit...cauliflower and onion (not together) are favourites here....just break cauli into florets or slice onion then make a batter from chickpea or coconut flour, mix veg in and then drop into hot fat (normally tallow) until they are golden.

I do a lamb curry, not sure how athentic it is but we love it.

I roast whole dried red chiles(about 3), cumin seeds- coriander seeds- fennel- and cardamom. Meanwhile sprinkle the lamb(or beef or chicken chunks liberally w/ turmeric)

Then I put them in the food process w/ a healthy amount of grated ginger- at least an inch worth and crushed garlic cloves- along w/ a fresh tomato if I have it- process until smooth.

Heat up your favorite TF fat then cook until just a bit until it is super fragrant. Then add some chopped onions- fry until carmelized lovely and then add your meat and enough bone broth and water to cover(and any chopped veggies you want as well). Add a cinnamon stick. Put the lid on and simmer about 30 min or so.

When nice and tender add a can of coco milk and a bit of chopped tomatoes or some more tomato sauce and some garam masala(lots of good homemade recipes out there for that as well). Also, a bit of sugar or honey if you like or some raisins.

Oh, and of course some good sea salt in there to taste!
