Coconut Oil - need links

I use coconut oil in my house (refined and unrefined) my husband was watching the today show this morning and he called me at work asking me why we use the coconut oil because it has so much saturated fat. And saturated fat is not good for you. I told him I just heard/read that it was better for you.

Now I need back up - can you please give me some information and links to quote back to him.

Ask in traditional foods and you might get some more info.

I eat tons of it (I get the Nutiva organic extra virgin kind), but I am not really a linky kind of person. My decision to eat it is based more on the cumulative amount of information I have read various places.

don't know about a quick link, but Real Food by Nina Planck is a really easy read which explains why saturated fat is NOT bad.

i'm sure the movie theatre popcorn (as discussed on the show) uses totally processed coconut oil and it IS really bad for you.

if you google Benefits of Coconut Oil you're going to find a TON.
