How do you keep your kitchen compost? - Page 2

We have a metal (enamel?) pail we got from ikea that has a lid. It doesn't seal, but the pail part has nice handles so it's easy to get outside.
It's this one http://www.ikea.com/us/en/catalog/products/60045656 Ours is blue though.

We use our largest stainless steel pot with lid for our compost and take it out when it's full (or we need to use the pot).

I have a stainless compost bucket like this one (though I got it from some other amazon vendor a couple years ago and it cost less ) :

It sits on the counter next to the sink and I empty it into a plastic grocery bag once or twice a week. From there it goes into our extra freezer for a few days and then into the worm bin in our barn.

When we still lived in the city and had municipal food and yard waste compost we used the biodegradable bags to line the crock. They worked great and kept the yard waste bin from getting disgusting inside and also kept the fruit fly problem down. They can be a bit pricey though.

We tried a metal container with a lid for a while, but it just got really gross and smelly. I have gone back to my old system: a plastic gallon milk jug with the top cut away so that the handle is still intact. It rarely smells bad at all--not having a lid seems to help. I empty it every 1-3 days or when it's full and give it a quick rinse at the pump. When it gets gross I recycle it and cut a new one. It's what my mom always did and it works for me. I keep it under the sink. I really like not having a lid too for tossing things in like eggshells when my hands are messy.
