We have 14 hens that have just started laying. I am averaging about 7 eggs per day. (Next summer should be interesting) I have been giving eggs away but still need to find a way to utilize them better. I make a souffle that takes 4 but that has cheese and my DS is allergic and there are only so many special dinners I am up to a week. We have scrambled eggs at breakfast since neither child will eat yokes alone. That counts out hard boiled eggs. Egg salad for lunch is one of those on again off again things for the kids.
What other recipes call for many eggs? Not only dairy free, but that helps.

We are always on the search for new ways to eat a lot of eggs!! When this happens, we eat a lot of fritattas (even the kids really like these and we use 10 eggs in ours). DH will make eggs benedict with real hollandaise (for 4 people you'll used about 12 eggs). Meringue cookies are always yummy and can use up a lot of eggs (4 eggs). Yesterday I made a homemade sponge cake (DH wanted tres leches for his birthday) which took 5 eggs. We usually do a lot of egg salad--I use a dozen eggs when I make this. This yummy looking
