Egg Recipes (More Eggs The Better)

We have 14 hens that have just started laying. I am averaging about 7 eggs per day. (Next summer should be interesting) I have been giving eggs away but still need to find a way to utilize them better. I make a souffle that takes 4 but that has cheese and my DS is allergic and there are only so many special dinners I am up to a week. We have scrambled eggs at breakfast since neither child will eat yokes alone. That counts out hard boiled eggs. Egg salad for lunch is one of those on again off again things for the kids.

What other recipes call for many eggs? Not only dairy free, but that helps.

You could make little egg muffin things for breakfast. I dont' know what you would call them, but it's what I make myself since I don't really do grains. I could find a more exact recipe but it's very forgiving. I just take a bunch of eggs, say two dozen, decice if you want a sweet or a savory thing. I just made some with eggs, flax seeds, dates, sweet potato and or banana for sweet and carbs, and cinnamon. I use about 150 grams cup of flax for a dozen eggs I'd say. what i'm shooting for is 2 eggs and a full serving of flax seeds per muffin cup. blend everything in a blender and pour in to a dozen muffin tins and bake.

Lemon curd uses up a lot of yolks and it makes nice gifts if you don't have a use for a ton of it.

German Pancakes

1 cup milk
1 cup flour
6 eggs
1/4 cup melted butter
dash salt

Blend all ingredients well. Bake at 400 in a well greased pan or muffin tin for 15 minutes.

The pancakes puff up around the edges and are delicious with syrup or lemon juice and powdered sugar or jam/jelly, etc. I'm lactose intolerant so I replace the milk with coconut milk and the butter with earth balance and it turns out great.

I stir egg yolk into sauces to thicken them. I make a sauce with onions and chicken stock, and stir a few yolks into them, then simmer for a minute or two, and then serve. It's yummy if you add bits of bite-sized chicken and peas to it, and then put it with rice.

pancakes/waffles (I make a ton and freeze them)
french toast
fritatta (I leave out the cheese since my kids are dairy free)
muffins
I make a breakfast casserole with potatoes, sausage, veggies and eggs
brownies (my recipe is dairy free)
sausage and egg scramble
my oldest loves ham and fried egg sandwiches, but won't touch a fried egg otherwise
fried rice

How about egg foo yung? Basically an egg pancake with veggies, and a thick soy sauce to drizzle on the top. You can just google for the recipe, as there are so many variations.

Egg custard and flan are my two go-to egg recipes, and they both work beautifully with coconut milk.

Egg muffins with meat and veggies are a stand-by breakfast food for us.

Challah bread takes quite a few eggs and is so yummy! This one takes 5 eggs and makes a lot. This one takes 4 eggs and makes less. And this is the one I used to make, although I haven't made it in years. HTH!

Similarly, tortilla española is well deserving of its fame. A 12-incher can easily use half a dozen regular-size eggs, and it keeps.

So glad you posted this! We have eggs delivered once a week. We get about 23 eggs a week!! Some weeks we do well going through them and some weeks (like this one) we hardly ate any eggs and got our new packs of eggs--we have at least 40 eggs to eat before our next delivery next Wednesday We are always on the search for new ways to eat a lot of eggs!! When this happens, we eat a lot of fritattas (even the kids really like these and we use 10 eggs in ours). DH will make eggs benedict with real hollandaise (for 4 people you'll used about 12 eggs). Meringue cookies are always yummy and can use up a lot of eggs (4 eggs). Yesterday I made a homemade sponge cake (DH wanted tres leches for his birthday) which took 5 eggs. We usually do a lot of egg salad--I use a dozen eggs when I make this. This yummy looking flourless chocolate cake takes 6 eggs. Homemade eggnog. How about those breakfast casseroles. . .I've seen recipes that take 12 eggs.

I love German pancakes! Lemon and powdered sugar is the best imo!Thanks for the recipe!!!!

Send them here! We can use them! Seriously, how about omelettes? Pudding uses yolks, meringues use whites. Angel food cake uses a bunch of whites. I have some in my family who don't eat the yolks in the hard-boiled eggs, so they just eat the whites, and give the yolks to someone who likes them. Eggnog is yummy, too.

This is really good. Creme Brulee is actually easier to make than people realize. It does have dairy in it but is a good use for leftover yolks:
