Can you cook with Sushi ginger??

Sent dh to the store for fresh ginger to make a "coconut beef stew" and he came back with Sushi ginger in a jar! Ugh! We had just had sushi the night before so he said it was on his brain. Needless to say, I want to put my recipe in the crockpot tonight or first thing in the morning and can't run to the store to exchange it.

Can I use it instead of fresh? Does anyone know?? I sure would hate to mess up an entire recipe over it!

You could try soaking (and squeezing out) the slices in a few changes of water to see whether the vinegar/sugar flavors can be attenuated enough for the dish at hand.

I didn't think about the flavor difference. I, personally, don't use Sushi ginger when I eat Sushi so I've never tasted it. I didn't think about it being sweeter... hhhhmmmmmmmmmmmm...

I was at a restaurant once and had a fish entree where the fish was basically coated in the pickled ginger and then cooked. It was fantastic.
