What to do with all this fat?

I boiled a big pot of beef bone broth and cooled it, and got like a cup and a half of fat off the top! And the second batch is on the stove right now. What can I use this fat for besides greasing my cast iron frying pan? Is it good to eat? I really don't want to waste so much fat.

You can use it for pan frying anything, or you can just leave it in the broth--it will melt when it heats up making your broth so fatty and healing!

I don't *love* the taste of beef fat for frying, so I leave it in my broth and it goes into soups or whatever I make w/ the broth.

I leave it in the bone broth, so it can add richness to the other foods we create from it.

Ok, well that makes sense. I will probably leave the fat in this second batch then...

I find it really handy for sauteeing veggies that are going into a really beefy stew. Or chili. Beef fat does have a strong flavor, so if the dish is already gonna be beefy, it works great.

This last time I made chili, I dumped in some beef mock stock (made an extremely lazy way) with it's cap of fat, AND had marrow bones in there. It was the greasiest, awesomest chili ever. My hubby wasn't as thrilled, as he can't manage to eat as much fat as I can, which meant even though he liked the chili, he got full before he'd tasted enough of it.

Oh, well. Pregnant mama's prerogative.

I can't eat butter, so I use the tallow from the top of beef bone broth for mashed potatoes. Throw in a goodly amount of the tallow, a couple of cloves of garlic, some sea salt and enough beef bone broth to make them the consistency you like... yummy mashed potatoes!

Oh stephinoodle, that sounds reaaally good, I might just try that next time I have mashed potatoes...
