if i just don't like the flavor or beef broth ...

i know how important bone broths are, and i always have good homemade chicken broth on hand, use it in everything. but i know i should also have beef broth going. the problem is, i just don't like the flavor of beef broth. i don't really like beef, period, though i've started getting some ground beef into our diet. but i don't really buy big bone-in cuts of meat.

i know i can buy just marrow bones, and i'm wondering if anyone has experimented with adding a marrow bone to a pot of chicken stock and how much it may alter the flavor?

or other ways i may incorporate beef broth w/o getting too much beefy flavor?

I'm new to beef broth too but I found that if I added veggies/spices to my marrow bones while they were boiling then the end result was much tastier and less beefy than the batch I made with the bones alone. I added (to a medium pot full of broth) a couple big carrots, about a half cup of celeriac (you could just use celery too), a whole onion cut into wedges, a handful of parsley, a tsp of peppercorns, and a couple bay leaves.

Why do you think you need beef? If you don't like it, don't consume it! There are plenty of other ways to get the nutrients you need.

I never drink beef broth or use it for soup as I don't think it tastes as good as chicken. I just use it in my recipes in place of water. So I use it for things like making taco meat and when we were eating grains, I'd use it to cook brown rice pasta.

as far as i understand it, the gelatin-giving cartilage in beef bones is much more concentrated than that of chicken bones. i'm pretty sure there are other differences, too.

yeah, i don't like beef broth even with herbs and veggies in it. i'm thinking of starting by putting just one marrow bone in a big pot of chicken stock and seeing how it goes.

I think beef broth you need to really reduce down. I think it tastes weird if it is too brothy, but if it is thickened and reduced it is good.

Are you making sure to roast the bones first? Broth made with unroasted beef bones is pretty unpalatable, but broth made from roasted beef bones is decidedly better.

If you don't really like beef, and especially don't like beef broth, that could be a sign that beef broth isn't a food your body needs/does well with. Why not just stick with chicken and turkey broth?
