good vegetarian cookbook?

we can't afford local organic farm meat, so dh and i decided to go vegetarian at home, but i am at a loss of what to cook! i'm tired of having mushroom and spinach spaghetti...lol. if you have some good vegetarian recipes (vegan is also welcome) or can suggest a good vegetarian cookbook that has a variety of filling meals, i would SO appreciate it!!

We're not vegetarian, but I like the Moosewood home cook book.

101cookbooks.com is a great place to start. She has some really excellent recipes and info on great cookbooks.

I'm not even a vegetarian, and I use this cookbook almost every day. It's a really incredible book, and I'd highly recommend it.

I second this reccomendation! We eat meat too but this is still my favorite cookbook ever.

I really like Lorna Sass' Complete Vegetarian Kitchen... if you have a pressure cooker, it's that much better, because she gives double recipes (stove top and pressure cooker) for a lot of the bean dishes and soups.
