vegan pancakes--tell me how

the family has a day-after-holiday tradition of pancakes. i'd love to take over the cooking, so i can actually eat them! what is your favorite light and fluffy, healthy but yum vegan pancake recipe?

I love this recipe:

We sometimes use half unbleached white flour or all unbleached white flour to make it taste like traditional pancakes instead of whole wheat. Still, yum!

1 cup of soymilk
1/2 cup applesauce
1 cup of flour
1/2 teaspoon of salt
3 tsp baking powder
1 tbsp sugar

Combine dry ingredients and then add wet.

I swear by the pancakes from Vegan with a Vengeance. Do a google search and someone's posted it. Definitely let the batter sit for 10 minutes to rise after you mix the wet and dry.
