I need a super-awesome green bean recipe

DH and I are in charge of bringing green beans to Thanksgiving (as well as a salad, but we already have that figured out). We need to make something that will feed about thirty people, and that doesn't have to be served piping hot (or can be kept hot easily).

DH and I are big food snobs. We LOATHE green bean casserole, and anything of the "dump a can of green beans in a pot with some bacon and boil" nature (his family, on the other hand, loves those two dishes, but we like to show them that there are better things in life ). So, we need to make something snazzy. I'd prefer to make something w/out nuts, as DS2 is not eating nuts yet.

Any ideas?

thanks, i hadn't thought of checking pw!

i'm okay w/bacon grease (i luuurve bacon), i'm just really not into boiled bacon!

Mine favorite is green beans and bacon but no boiling.

I do soak them for awhile first (I always use frozen). Fry and crumble bacon. Soften an onion in the bacon grease. Layer the bacon, onions, green beans and a few spoonfulls of bacon grease in a baking dish until everything's gone. Then bake them.

They aren't fancy but if you like bacon, they're really good.

This might be too similar to regular green bean casserole for your taste, but I normally hate the stuff and this recipe won me over.

serves 6-8

3T butter

1 small onion finely chopped
half green pepper finely chopped
8 oz mushrooms sliced

8oz sour cream
2 cups grated jarlesburg cheese

1 lb trimmed steamed green beans/or 1 lb frozen/ or 2 cans cut green beans

1 cup bread crumbs/crushed cornflakes/those onion things in a can

saute onion, pepper, mushrooms in butter until soft in a big frying pan. Add sour cream and cheese, mix well. Add green beans and mix. Put in a casserole dish, top with bread crumbs, bake at 350 for 40 min.

szchuen green beans! YUM!!! Easy in the micro if you use, but not hard w/o one either. Great hot, warm or cold!

We'll be making green beans with a shallot/dijon vinaigrette. I don't really have a recipe, since I just make it up, but it's basically just like it sounds. Works really well at room temp.

I second Katwrangler's butter & lemon and puffingirl's shallot/dijon vinaigrette suggestions! I personally love them roasted with sweet potato "fries" and whatever other veggies, but decided on doing a casserole instead to be more like what my mom and brother expect. Up until yesterday, she was planning to make the dinner, so I'm trying to keep it similar... but some of these recipes are making me reconsider!

This will be our first try at it so i can't really recommend it yet, but I am making a green bean casserole from all fresh ingredients (well ok the bread for the crumbs is stale but... no cans!!)... in case it's more the canned stuff that really bothers you and less the casserole style... the recipe calls for frozen but I am just steaming the green beans.

Just a heads up to use fresh green beans if you can. Consumer Reports tests found super high levels of BPA in canned green beans.

And canned green beans are really gross unless you are making green bean casserole.
