Need quick help... can I just? (baking a chicken)

I thought TAO would give me a quick answer....

Can I just throw a cut up whole chicken in the oven, with some carrots onions and potatos and bake it?
Do I cover it, add any liquid?
Would it be on 350 for about an hour or higher temp??

I usually don't cook chicken this way, lol, and I have no idea how to search through a billion recipes for baked chicken to find a similar idea.

If you have the skin on the chicken, then perhaps just a brush of liquid now and then (including its own juices, once that gets going) would be fine to make sure it does not dry out. If skinless, then I might toss it all in a bit of olive oil (which you could also do with the skin on for more flavor).

If you use a clay pot with a lid, yes. Otherwise, I would use a baking bag- I don't like dry chicken.

You can also just tent it with foil, which I do mainly because otherwise the chicken spits and my stove smokes.

I wouldn't cut it up. I'd butter/oil it and season it and bake it at 400 degrees until it's at temp. (Usually 1.5 hrs depending on size).

My chicken is never dry. Ever.

roasting is the way to go. High heat will crisp the skin and not dry out the meat.

heat oven to 450

toss veggies in olive oil w/ salt, pepper, maybe some rosemary or thyme. Add some whole garlic cloves if you have them.

spread veggies on a jelly roll pan and place chicken pieces on top. Brush chicken with olive oil and sprinkle w/ S&P and more herbs.

Cook until veggies are tender, chicken is crisp and the juices run clear

Thanks for moving, and sorry. I had it in the oven when I posted with my dh on the way home, so I had really wanted a quick answer and forgot about the rules.

Anyways, it was bought split and had the skin on so I just basted it a few times.
It was pretty tender... the carrots needed a little more time (I had left them about 1-2"). I was nervous about not covering it, but it seemed to be fine.

I do like crisk skin but now I tend to not eat the skin, but I'll try a higher heat next time.

You can cut it in half and stick it under the broiler.
