EDITED: pudding woes

I made homemade vanilla pudding to use in a dessert recipe, and then decided I won't be making that dessert. It calls for instant vanilla pudding and Cool Whip, and I can't get it to taste good by using "real" foods. Sad, huh?

Anyway, I have about 12 cups of vanilla pudding that isn't so great....it turned out sort of grainy. Does anyone have an idea for using all of this pudding? It tastes good, but the texture is too weird to eat by itself as a dessert. I don't want to waste it....that's a lot of milk and eggs.

How about making either a pie or parfait that also includes granola or chopped up cookies or candy bars so the graininess of the pudding won't be as noticeable?

Edited to add: It also might make a good dip for fruit or topping for waffles or pancakes.

Just checked the pudding section of my favorite cookbook and there is a recipe for English Trifle that uses a fair amount of vanilla pudding. It's basically layers of ladyfingers (or white cake), fruit, and vanilla pudding, with whipped cream and slivered almonds on top. This might work for you.

I've seen cake recipes that utilize pudding?

What about layered berry parfaits?
