What did I do?? (yep, another turkey question)

I think I'm just going to own up to my own cluelessness right now. I put my turkey carcass in a pot of water and cooked it all day. Removed the meat and bones. I didn't know what to do w/ it at that point, so I put the pot of liquid in the fridge. (after skimming off a bunch of fat) I just got it out and it is a big pot of gelatin basically. Like cold gravy.

Tell me what I did, and what I should do with it.

Suunds like you did it right. The more gelatin-y, the better.

When mine is done (it's still in the crock pot) I am going to freeze it in portions to add to make soups, gravy, cook rice in, etc., just as I do with chicken stock/broth.

When you heat it, it will thin out.

Oh, thank goodness. DS and I were just staring at it. He recently had jello for the first time at preschool, so he said "Turkey jello!!". That is exactly what it looks like.

I have way more than I need right now. Freezing it seems like a good option. What is the best way to do it?

Broth jello is good! That is a sign of a great broth.
