I grabbed the turkey carcass from T-day dinner and brought it home to make broth, but I haven't had a chance to do it until today. Is it still ok? How about the turkey meat I brought home...ok to eat?
I would use both. Of course, I am munching on a turkey pot pie I just made as I type
If you can't get the stock going tonight, I'd put the carcass in the freezer until you are ready to use it. You could do the same with the meat if you don't have a plan to use it tonight or tomorrow.
I started my carcass stock last night and t-giving was 4 days ago for me. I usually use the meat for 5 days after and then if there's a lot left I'll go ahead and freeze it. I just looked it up and cooked meats are still good for 4 days.
Great! Thank you all so much for reassuring me. I actually went ahead and started the turkey stock this afternoon anyway. I figure that as long as I have it simmering for 24 hours, it'll kill anything bad anyway. Plus, I really want some turkey broth.
Thanks y'all! I tossed the turkey carcass in the freezer on Thanksgiving knowing I wouldn't get to it. However, I still have the [fully intact] turkey legs in the fridge and we've only used a small portion of the sliced turkey meat in our turkey pot pies last night. I better get busy stripping the meat off those legs and toss the other meat into the freezer.....

TIA!
Did you put it in the fridge once you got home?
I know that my mother used to leave the turkey carcass on the stove for a day and nibble at it, but I think that's highly unsanitary and scary, I would never do so.
Yes, I put the carcass straight into the fridege when I got home. My Gram used to nibble on things all day long and then put them into the fridge at the end of the day. She survived, but I'm not willing to take the chance.
