Any good amaranth recipes? What about cookies?

I am trying to get amatranth into my 2 yr dd to help heal her gut. I need ideas to get it into her. She doesn't like it when I make it into a porriage type. Is there a way to make yummy cookies with it?

I'm interested in ideas here, too. Have you tried amaranth flour? I just tried it for the first time and did not like it, very wooly like buckwheat. I like the whole grain made into a porridge just fine, it's more mild. Maybe the flour is better combined with other flours? Or has anyone made baked goods with whole cooked amaranth?
