good idea for the crust. I was going to use cookie crumbs b/c I have too many animal crackers. I have never made a cookie crumb crust but someone here said to pulse them and add melted butter, I assume I could add coconut oil instead.
All the recipes I have seen use regular milk, I made one like that once and it was good but I would like it extra coconutty, kwim? Thinking of making coconut pudding, I have a recipe for cocolate-coconut pudding that's really thick, and just putting homemade whipped cream on top with toasted coconut. Or trying the egg white top again, I think that holds up better over time in the fridge cause my whipped cream always starts to get runny after a day or two so I try and only make what I will use within a day and just make fresh every night dh wants pie.
Once all our pie is gone around here from turkey day i will give it a shot and let you all know.
