where do you get a starter culture? is it complicated to make? how did you get started with it & what benefits do you see? any problem with me starting something like kefir as i'm nursing a newborn? anything other info helpful for a newbie like me? thanks!

There are actually two types: Milk Kefir and Water Kefir. Both contain probiotics and are generally thought to be more useful (in terms of probiotics) than even yogurt. Kefir is really easy to make. You add the starter (also known as kefir grains) to the milk or sugar water and allow it to culture generally for 24-48 hours. Once it's done, you can flavor it with fruit, etc.

To the best of my knowledge, there isn't any reason you couldn't start kefir while nursing but of course officially you should check with your midwife or doctor. You might want to start out with small amounts though as some people experience a bit of a cleaning out effect while their system adjusts.

I have goat milk kefir and I detest the taste, it makes me gag. I have to plug my nose to drink it, then quickly drink or eat something tasty after. But I've never liked the taste of goat milk. The water or coconut milk ones look good!

Goat milk kefir isn't the most pleasant tasting. I admire people who drink it regularly.

I'm determined to finish it, but I don't know if I can. I paid 6 dollars for it, so yeah. I wish I knew how bad it would taste. Next time I'm just getting sauerkraut. They have they unpasteurized one there and I love sauerkraut.
