Well, we've had our kitten on raw food almost since she came to live with us (we transitioned her over a two week period). We put her raw food on a plate and put the plate on a large tray. Any time she drags it off of that tray, we put it back on the plate. We use a soothing tone and praise her when she keeps it on the tray. (We don't actually care if she keeps it on the plate. It is just easier to serve it that way. But we do want her to eat on her tray.) Gentle redirecting has worked well! If I have to move her food back to her plate more than 2-3 times in a feeding, then I put it away in the fridge and offer it again later. DH plays that game far longer. We started out feeding her many times a day since she came to us very young, but gradually cut it back to two times a day. If she indicates she is hungry, we feed her. She is still a kitten and she has growth spurts just like human babies.
We feed raw chicken with bones and skin, usually wings, every other batch. In between, we feed raw beef without bones (our kitten still cannot munch the beef bones much and we have to cut beef up still) or raw fish with bones and skin. We also mix things up by giving her whatever meat we are going to have for dinner before we cook it whenever appropriate. Our kitten prefers her fish cooked nowadays, but used to have a field day with it raw. We actually resorted to tossing the fish and the kitten into our shower (full size, like a tub, but no tub, with glass doors). As long as someone was in the room with her, she LOVED it! The raw fish just doesn't seem to fill her up enough now, so we feed her raw and then give her any of our cooked leftovers as well.
We haven't gotten to mice - mostly because we don't want to feed her outside (high coyote population here) and we aren't crazy about mice.
Our current batch of fish came from Smart & Final. It is catfish. Before the catfish, we had whole tilapia (fish heads and all), also from S&F. Both came frozen in large bags. We thaw a few days worth at a time. All previous fish was us buying enough fish for four and giving her one serving and the three of us the rest on a per meal basis.
Our current batch of beef is stew meat from Costco. It is a good size for her without further cutting. We broke up the large package and use some for us and some for her. We thaw it one small batch at a time. She can only eat a couple pieces of beef at a meal.
Over the course of any given week, she has chicken, beef, and fish. We also give her a raw egg each week, starting with just a teaspoon of yolk when we were cooking eggs for us. She still doesn't eat a whole egg in one meal, but she does in a day.
