fancy dessert that is dairy free and made w/ coconut oil??

it doesn't have to be vegan or egg free. I've been invited to a fancy soiree and am bringing a dessert. So cookies/cupcake aren't going to cut it.

I'd prefer to not use margarine, so want to use coconut oil instead.

Does anyone have any ideas? thanks

Nothing specific is coming to mind (I rarely get to make fancy desserts these days) but you might check out this blog: www.thenourishinggourmet.com She always has the best recipes and she never uses margarine.
