Vital Wheat Gluten

I just made a thanksgiving "Turkey" using vital wheat gluten and it came out pretty good. I was searching the web for recipes to add to my portfolio and a lot of them contain vital wheat gluten.

I know it comes from taking the protein part and seperating it from the carb part of bread. Is it something that is healthy to eat as part of the regular diet or is it considered over processed and something you shouldn't use all the time.

I am trying to eat healthy but health stuff isn't my big knowledge base. Sorry if it is a dumb question.

I wouldn't eat this stuff as a staple in my diet. Like any other mock meat, it's an occasional thing and not something that should be eaten several times a week or every day. It's very high in protein, which is not a bad thing, but too much protein can create an acidic environment in your body and that's bad for your bones.

Also, be careful about what you buy. The names vital wheat gluten and gluten flour seem to be used interchangeably and gluten flour is not the same thing. I figured this out after a few years of always making seitan (which is what we vegans call stuff made out of vital wheat gluten) that fell apart and was totally inedible.
