Spam me with your dairy-free cookie recipes!

Eggs are fine, I am off dairy while nursing DS for a while. But the cookie season is upon us and usually that means BUTTER BUTTER and more BUTTER.
Alas, I need delicious choc chip, gingerbread, sugar cookie cut-out recipes with no butter! Is it possible that delicious ones exist? I mean really delicious ones!

I need recipes from people who can vouch for them. Out there on the interwebs there are recipes that promise but don't deliver.
Can I sub butter flavored shortening (blech? ) in my other recipes?

Have you tried applesauce? I made chocolate chip cookies w/ applesauce yesterday and they tasted great. I've also made them with coconut oil and they tasted good too.

If you use refined coconut oil (you can still get good quality organic stuff) it has no coconut flavor. Use that in place of butter, and voila, all of your favorite recipes work again!!! Almond milk or coconut milk can replace any milk.

I haven't tried them all yet, but I really like this website for GF/DF recipes. She says you can sub coconut butter for regular butter for nice texture.

These are the bees knees! I've not only tried them, but these have caused my waistline to grow!

My non-vegan friends say they are better than any choc chip cookie they've tried. That and they only have 1/4 cup natural sugar.

ETA: Have you tried Earth's Balance? It is so yummy! It is soy based, but they do have an organic option. It comes in convenient baking sticks as well.

I sub coconut oil in any cookie recipe that calls for butter. It makes a soft drop cookie that holds its shape well. I'm not sure for a rolled cookie if it would work, it might make the cookie greasy. Any chocolate chip cookie will work with coconut oil, we make them all the time.
