Will you please spam me with your best quinoa recipes?

Anything, vegetarian, non-vegetarian, whatever. No allergies here either. I have a couple ways that I know how to cook it but I need some more ideas.

We love quinoa and sub it in any recipe that calls for couscous. Here are a couple of our favs:

We also just like to make it some stock and eat it as a grain side dish with dinners. DD's fav meal is salmon, couscous, and asparagus

I make a salad by adding dried cranberries, walnuts or pecans, baby spinach or lettuce pieces, and a balsamic/lime juice/olive oil vinaigrette. I alter it sometimes by adding celery and/or green onions or using raisins or apples instead of the cranberries.

We don't eat a ton of grains, but this salad is a favorite in the warmer months:

quinoa--looks prettier if you use the red kind
peas (or shelled edamame, I guess)
toasted pine nuts
chopped sun dried tomatoes
balsamic vinaigrette

we make stuffing with Quinoa instead of bread becausewe are GF. We add celery, onion, mushrooms, poultry seasonings, chestnuts, apple, and craisins. It is very light but still tastes like thanksgiving stuffing.

Just learned this one---Roasted Red Quinoa with Root Vegetables. Basically put bite size pieces of squash, yams, beets, celeriac (whatever you like) in a large baking dish with red quinoa, water, oil, garlic and whatever spices/herbs you like. Roast for about an hour. Top with feta or goat cheese to serve. Heavenly!

Mmm I love quinoa. Some of the things I make with it:

1. Stuffed peppers: toss cooked quinoa with sauteed onions, toasted pine nuts, raisins, minced parsely, goat cheese, olive oil salt and pepper. Stuff in peppers and bake (I blanch my halved peppers first so they bake faster)
2. Quinoa flakes hot cereal with butter or coconut oil, cinnamon and honey
3. Tabboulleh made with it instead of bulgur
4. Curried Quinoa salad: toss cooked quinoa with chopped veggies (I did cucumber, celery, peppers, tomatoes, etc), a splash of coconut milk and curry powder. Chill for a few hrs or overnight before serving
5. Serve in place of rice with stir fries, curries, with beans, etc
6. I found a great muffin recipe using cooked quinoa, pureed fruit, oats, corn meal, etc in the Golden Door Cookbook from the Golden Door Spa
7. I also like quinoa flour for pancakes, etc

I love doing a simple quinoa pilaf: soak/agitate the quinoa a bit to get rid of the saponins, then dump the water. saute some onions, add the quinoa to the oil and toast/fry a bit. when it is nice and toasted, add some water or brine, some raisins, and some salt. cover, and let it cook. Add water as needed to cook the quinoa.
