What's cooking in December, Veg*ns?

Hope I'm not overstepping my bounds but thought I'd go ahead and start a new thread as I didn't see one yet.

Tonight I'm doing a Red Pepper and Potato Frittatish type thing with tofu.

Is anyone else on her doing Weight Watchers as a veg*n? Anyone intersted in listing point counts with their meals or fat/calorie/fiber counts with the recipes? Just wondering if anyone esle does this or is it just me?

tonight we had whole wheat spaghetti topped with a garlicky marinara sauce that had lots of mushrooms and tvp (texturied vegetable protein) in it

chocolate chip oat walnut cookies for dessert

we had lentil sunflower pie from vlv (love that recipe!), sauteed broccoli, and baked sweet potatoes. it felt like a very wholesome little meal when i was looking at it - ha!

Oh and we had Tofu Scramble from VWAV, Belgian Waffles from Joy of Vegan Baking, and tempeh "bacon" that I just made up. I just made some whole wheat bread for sandwiches etc.

we ate out last night but I spent the day cooking to stock the frezzer for the next few weeks...Veggie SOup (LOTS), pasta sauce and pinto beans...took me hours and I feel I should have had MORE.....beter do some baking today!

how were the beans? i've been meaning to try those and keep forgetting about them!

I gave them a 7/10. DH and DD hated them. DH said it was like eating hot hummus with rosemary and sage. Sigh.

I think this would be good with some toasted pita points. It was really good with the olive oil drizzled on top.


We're having this tonight: Roasted vegetables with Field Roast Apple & Sage "sausage", idea taken from here

I ended up making the frittata last night instead of saturday. I made the Asparagus and Sun Dried Tomato Frittata from VWAV. It tasted awesome but it crubled the second I tried to lift it out of the pan. Flavor was really delish though.

Tonight we're having Tofurky roast, roasted potatoes/carrots/broccoli, and the mushroom gravy that comes with the tofurky. They were on a good sale at trader joe's after the holidays!

Tonight we're doing Tempeh BLT's and celery and carrot sticks. Not the most inventive but it's a week night and that's a quick dinner.

Today I'm roasting parnsips, sweet potatoes, and tempeh.

I'm afraid I've not been feeling very creative lately.

I think we are going to have left over spinach & tofu lasagna. If I feel up to it I might make a salad too. I am to blah feeling to but much effort into dinner tonight.

Last night we had Gimme Chimis out of Eat Drink and Be Vegan, with some major substitutions. Subbed previously-frozen, thawed, and marinated tofu cubes for the tempeh/beans, subbed thinly sliced cabbage and frozen corn for shredded zucchini. Our chimis didn't stay together all that well in the frying pan due to tortilla size/composition, but they sure are tasty! Love the flavor of the spices in that recipe (chili powder, cumin, cinnamon, oregano, chipotle tabasco, balsamic).

Thanks!

I didn't even make it to the left overs last night. I made a frozen pizza for the boys. DH & I had cans of soup. Tonight will be better, I just don't know what yet, but I have a 2 pound bag of broccoli florets I need to use before they go bad.

I am very proud of myself & the beautiful, healthy meal I made tonight that also really helped use up some lingering stuff. I made a chopped salad (my new favorite thing to eat) & a vegan sausage, potato, & broccoli soup. The boys had leftover spagetti & some salad veggies. I am so stuffed!

Left over roasted squash, yams, potatoes, apples, thyme and onions with Field Roast Apple Sage "Sausage" with a side of brown rice. I think I have a new favorite!!!

Ok, so I posted this before I ran errands....we ended up eating at Noodles & Company. I had the Indonesian Peanut Saute with Tofu. It was hot and spicy deliciousness. And it better have been, after finding out how many calories there were! Sheesh!
