Last night was ginger sesame rice noodles with edamame & broc. Tonight will be chopped salads & roasted sweet potatoes.

Last night was Quorn "turkey" roast (I thought it was pretty gross), mashed potatoes, gravy, steamed green beans, and spinach salad.

Tonight we had veggie/cheese calzones and spinach salad.

Can you tell I have an abundance of spinach?

Last night I had chocolate chai cupcakes, lol. As an afterthought I decided to eat something slightly dinnerish and had whole wheat rotini with spaghetti sauce but I was full from the cupcakes so didn't each much of it, lol.
Tonight it's a Christmas Party at a local mexican food restaurant. Wonder if there'll be anything on the menu that's vegan and low fat.

Yesterday, I finally made a lentil loaf using the "magical Loaf studio" many of you have been using. I used lentils, walnuts, flax seed,bread crumbs and onions,garlic,carrot and celery for the veggies along w spices. I wasn't sure how the loaf was going to turn out but it was delicious. I could hardly wait for leftovers tonight. I also made the glaze from Vegan dads site. Thanks for the tip Keeta! We had mashed potatoes and steamed veggies w it. I also made a gravy just in case it didn't turn out but it really did not need it. My 3 yr old loved it too. Can't wait to try another loaf!

Awesome! I think you could put that glaze on baked garbage and it would still taste good! So glad that your loaf turned out well. We made one last week using tofu as the base (usually I use beans or lentils) and it was soooo tasty and moist! Love that site.

Tonight we're having a clean-out-the-crisper stir-fry, loosely using a recipe out of ED&BV (Broccoli and Cashew Terriyaki Stir Fry or something like that). Waiting (impatiently) for the tofu to brown up so we can move on to step 2...sometimes I really hate non-stick pans and wish I had a cast-iron wok...

Tonight was Mexican Lasagna. Somewhat time consuming but well worth it. Very yummy!

Lentil chilli. I didnt have any beans soaked so I used lentils and added some red rice for more protein. I added corn, peppers, mushrooms and diced tomatoes.

last night was going to be seitan with cream of mushroom soup on top of the seitan and mashed potatoes but instead we had veggie pizza since we were at MIL house since we got lots of snow and we were coming here today anyway for xmas. We would not of been able to get out with our road yeah

I was supposed to make this yummy looking polenta lasagna, then I changed my mind and decided to make a fabulous pot pie, but ended up in a pretty foul mood today and really didn't feel like any elaborate cooking so I went with potato and kale soup and rolls. I did make a super tasty cinnamon swirl bread for breakfast though. Nothing like a ton of sugar and carbs to cheer you up.

I made homemade pizza tonight. One with meat for the omnis (my son, his best friend and my sons father, who was eating with us.) and one vegetarian for me. (My son looved the vegetarian one, too.)

Thin crust, lots of pastasauce on the crust, cheddarcheese, red onion, black olives, sundried tomatoes and a little feta cheese on top. Very, very yummy!!
