zucchini pancakes?

I made the recipe from the Dr Sears website (scroll down)

They were delicious, but a big floppy mess that only browned on one side? I can't figure out what I did wrong as I was following the recipe exactly. (made 3 smaller pancakes)

Any thoughts? I loved the taste and would make them again, but would like to firm them up so my toddler could hold them. I'm eating grain free for breakfasts right now, so can't add flour.

Did you squeeze or drain the juice out of the zucchini? If not, doing so would firm them up. Or maybe you could add some sort of nut meal to them?

Definitely squeeze the zucchini dry... sprinkle it with a little salt, let it sit about 5 minutes, and then squeeze it as hard as you can before adding it to the eggs. And you also need enough fat in your pan, and it must be sizzling hot in order to brown.

I make something similar (but with shredded potato and carrot as well as zuccini) and find that squeezing out the water from the veggies is super important.
