Premaking mixes?

Like pancake mix, muffin mix, etc. Do you do it, and do you have a great recipe? I realized yesterday when my DH was starving and I was occupied with the baby that I have nothing he can really make himself in the baked goods category, I had to hand him the baby and take the time to make biscuits from scratch rather than letting him just add liquid to something and bake it himself. I won't buy commercial boxed mixes for obvious reasons, but I'm open to ones I can premake myself.

I pre-make pancake mixes and muffin mixes to save myself time in the mornings.

I can post my pancakes right now, but will have to get back with you about muffins, since I just packed up all my cookbooks in anticipation of our move, next weekend.

Pancakes:

2 1/2 cups flour (I use a blend of whole wheat or spelt and white)
3 tsp. baking powder
1 tsp. salt

I toss it all into a ziplock back and refrigerate it until I'm ready to make them. When ready to make, add the following ingredients, and continue like normal:

2 eggs (I usually use 3 or 4)
2-3 cups milk (I often use kefir)
1/4 cup oil (I use melted coconut oil)

Has your DH ever just tried to make pancakes or biscuits or whatnot? Maybe he has no idea how easy it really is. I mean, it's not rocket science to measure out 4-5 ingredients and stir them together. He might enjoy it.

If you want to make a bunch to save time and then be able to make just a serving or two of pancakes, here's a recipe of Alton Brown that has a good reviews:

I make a mix with just flour, salt, baking powder, and coconut oil mixed to resemble that bisquick type thing. I can give you the amounts I use if you've never made it. I use all different grains though, typically I do whole grain with spelt, buckwheat, brown rice, barley, rye and oat groats. I always bake by weight, so i'd have to quick calculate out in to cups/tablspoons. I use my vitamix to fresh grind it all and it's easier to just add grains by the ounce.

Then I found some nasty looking bisquick type recipes and just used my own mix and they worked really well.
