Protein Packed Breakfasts

Hello!

I am a vegetarian, looking to cut out dairy again (used to be vegan) but will probably be keeping eggs in my diet.

I have for a long time suspected I have inattentive ADD and have been reading benefits of eating a high protein diet for those with ADD. I'm wondering if anyone has some yummy ideas for high protein breakfasts for me. I don't have much time in the mornings, so quick meals are best, or crockpot meals could probably work too!

One idea is oatmeal with nuts and Kashi high protein cereal added in. I also have this Rice protein powder to be used in shakes, but I don't like it much by itself, so this could me added in too.

I also really like beans and scrambled eggs.

Any ideas?

I do much better with a protien-filled breakfast as well. (I also suspect ADD) I have had black bean or lentil soup a few times for breakfast recently. I know it isn't very 'breakfastish' but I really liked it.

We eat white bean "gravy" on some form of bread/biscuit.

Annabelle used to get smoothies with kale and rice protein powder too.

I've been watching my carbs because of almost failing my gestational diabetes test, so I've been wondering about this, too.

One idea I heard from another MDC mama was to add almond meal/flour (just ground up almonds) to your oatmeal to add a lot more protein. Just got some at TJ's yesterday, so I've yet to try it out but it sounds good!

Also look into getting the most protein bang for your buck out of your bread. I've been using Ezekiel 4:9 Sprouted bread, which has 4 grams protein/slice. But I just heard about hemp bread (looking at this brand in particular) and it has 13 grams per serving (6.5 g/slice). So two pieces of toast with peanut butter would put you at 21 grams of protein - not too bad!

There's always soy yogurt, too with some granola. It has too much sugar for me for the morning, so I've been having regular dairy yogurt (greek kind) which has waaaaay fewer carbs and lots of protein. But if you're just looking at protein, then soy yogurt's got it.

I'm also a fan of Tofurky Breakfast Links. They have no soy protein isolates and are pretty tasty. My default lately has been one egg, one link, and one piece of Ezekiel toast w/ Earth Balance (maybe some steamed kale on the side) - and that gets me to about 23 grams of protein for breakfast.

Wow, I was just coming to post about this! I need protein ideas that aren't eggs -- I eat eggs but only when they're in things as I don't like them by themselves. Lately I feel really shaky if I just eat a carb breakfast and I'm trying to cut down/out veggie sausages that have soy protein isolates.

I was wondering if anyone has any breakfast-ish ideas for beans? I wonder if beans would work in a smoothie disguised by fruit?

I like tofu fried in a little bit of olive oil, sprinkled with salt, pepper and nutritional yeast, on a slice of whole grain toast and topped with sauteed spinach or beet greens.

I am craving biscuits & gravy now. Someone please share a recipe for some white/sausage gravy. I know they exist I just don't know where.

To up the protein on our oatmeal I add hemp seeds, ground flax and some partially ground sunflower seeds as toppings.

This sounds so good
Great ideas in this thread!

scrambled tofu with black beans rolled up in an ezekial sprouted grain tortilla has a nice amount of protein. You could top with avo or salsa too if you like.

My breakfast rotation is:

Teff hot cereal with coconut butter, dates and chopped almonds
Millett hot cereal with 2 TBLSP hemp seed, apples, cinnamon and honey
Eggs and fried potatoes
Manna bread (a 1/4 of the loaf, so like twice the serving size) w/ 2 TBLSP almond butter
Oatmeal with 2 TBLSP peanut butter and 2 TBLSP flaxseed and stevia
Whole grain pancakes/waffles with 2 TBLSP cashew butter and fruit topping
Egg or tofu scramble burritos on Ezekiel 4:9 tortillas

Plus I usually have a green drink like Perfect Food by Garden of Life or Vitamineral Green...so all of the those breakfasts are around 20 grams of protein. Plus, they are all dairy free as you are doing.

The gravy recipe I use is fairly simple. Find whatever "sausage" you want to use and crumble it up and brown it in your skillet. Put it aside on a plate. In the same pan melt down about 2-3 T of soy butter. I am writing it vegan but you can use whatever you have on hand. Sprinkle in about 2-3 T of flour and coat it through the butter. Then pour in a cup or 2 of soy milk. Make sure it's not vanilla flavored. Stir constantly and get the flour to thin out. It will start to thicken up. Add in salt and pepper to taste. You can manipulate the thickness by adding more flour (it doesn't take much) or more soy. You can also use veggie stock. I have used a combo of both and it is tasty as well. Then add the "sausage" back in and stir together. I make it often and love it over homemade biscuits! I always get bummed when I go to restaurants and can't have it

i am a big fan of eggs but don't love them not all loaded up with veggies, etc
i will poach an egg in anything and call it breakfast, one of my all time favorites being a cup of beans or better yet jalapinto beans. other things i have tried; gumbo, veg soup, cabbage soup, bean soup, just in veg broth as an egg drop soup. i also like egg fried rice for breakfast.

I make a sauce out of melted Earth balance and nutritional yeast...sometimes put that on whole wheat bread with avocado and tomato. Each of those things has a little protein...which adds up to around 17-18 g of protein. Also carbs though, if you're avoiding those

I've heard of baked beans on wheat toast before (I'd think homemade baked beans would be healthier.)

Also, quiches are always an option, if you eat eggs...you could pack in some veggies that way too!

I make green smoothies and add either nuts, nut butter, silken tofu, or soymilk for extra protein.

I've done pre-made breakfast burritos and frozen them (warm up in any way but at the time I made them for DH so he used the microwave....we don't have one anymore). I've also done breakfast eggrolls (I fried mine but they could be baked). Those were a HUGE hit. I used Azumaya egg rolls wraps and then just did eggs, cheese, potatoes, and corn. The burritos were just plain flour ones.

My kids last longer with a good fat included. They adore bagels with an avocado cream cheese (you could do just a whipped avocado but if you wanted the cream cheese its just about 50/50 mix).

Another good one, though more of a snack item that would be good mid morningish, is a black bean hummus. It's perfect for veggies with a bit of bite (like radishes). We love that one too.

You can make up Quinoa like oatmeal, or any other hot cereal. Depends on time constraints maybe.... Depends on how your morning goes. SUPER tasty.
